Don’t throw away over-ripe tomatoes – that’s such a missed flavour-packed opportunity! Make this tasty salad instead. Perfect at any summer barbecue, or as a side for fish.

Ingredients

150g ripe tomatoes

½ a clove of garlic

olive oil

red wine vinegar

1 x 400g tin of black beans

50g mixed salad leaves

Method

  1. Grate or finely chop the tomatoes and mix with 1 tablespoon of olive oil and a splash of red wine vinegar in a bowl.
  2. Peel, finely grate and mix in the garlic.
  3. Drain and add the beans, then finely chop the salad leaves and toss together. Season to perfection with a pinch of sea salt and black pepper.
