Ingredients

200g feta cheese

2 tablespoons Greek yoghurt

olive oil

Top Tip

You can take this base recipe in all sorts of fun flavour directions. A sprinkling of lemon zest or chilli flakes would work a treat, but you could also sweeten it with honey, or sharpen it with a splash of vinegar. The world’s your oyster!

Method

  1. Place the feta, yoghurt and a good grind of black pepper in a food processor and blitz for 2 to 3 minutes, or until smooth, scraping down the sides of the bowl a couple of times to ensure you get an even texture – you could also do this in a bowl using a whisk.
  2. Slowly drizzle in 2 tablespoons of oil towards the end of blitzing – you’re looking for a light, fluffy texture. Cover and place in the fridge until needed – it will keep for up to 3 days. Delicious with a Simple cucumber salad.

If you don’t have yoghurt, try crème fraîche.

Try folding leftover whipped feta through mashed potato, or spread it on toast, ready to top with a poached egg and a little chilli.
