A good frangipane tart is one of life’s true joys and a staple dessert in my repertoire. Feel free to swap out the sauce for different seasonal jams to make your tart really of the moment, making it super-versatile. Here’s my festive version.

150g unsalted butter (cold), plus extra for greasing
250g plain flour, plus extra for dusting
100g golden caster sugar
1 large free-range egg
30g quality cocoa powder
SAUCE
300g dried cranberries
4 oranges
FRANGIPANE
100g blanched hazelnuts
100g blanched almonds
250g unsalted butter (at room temperature)
250g golden caster sugar
3 large free-range eggs
60g plain flour
TOPPING
100g quality dark chocolate (70%)
100g blanched hazelnuts
