Ingredients

2 limes

extra virgin olive oil

1 ripe avocado

1 spring onion

½ a green chilli

2 sprigs of mint

1 tablespoon Greek yoghurt

Method

  1. Squeeze the juice of 2 limes into a blender and add twice as much extra virgin olive oil. Halve and destone 1 ripe avocado, then scoop in the flesh. Add 1 spring onion and ½ a green chilli, pick in the leaves from 2 sprigs of mint and add 1 tablespoon of Greek yoghurt. Blitz until smooth. Season to perfection with sea salt and black pepper, loosening with a little water to create a drizzling consistency. Use right away, or keep in the fridge for up to 3 days, shaking well before use.
