1kg frozen blackberries

150g golden caster sugar

1 lemon

Top Tip

You can use blackberry compote in so many wonderful ways! Use it to top pancakes, porridge or yoghurt for breakfast, or dollop it onto rice pudding, ice cream or cheesecake for dessert.

Method

  1. Place the blackberries in a large saucepan and scatter over the sugar. Mix well and allow to sit for a couple of minutes.
  2. Finely grate in the lemon zest, squeeze in the juice and mix well to combine.
  3. Bring to the boil and cook for about 15 minutes, or until some blackberries have broken down and others are whole with a syrup-like consistency.
  4. Allow to cool completely, then store in the fridge where it’ll keep happily for up to a week, or in the freezer for up to 3 months.

When summer draws to a close in the UK, you can find wild blackberries in their masses along hedgerows, and they’re ripe for the picking! Just make sure you pick them away from roads and out of the reach of dogs, and wash them first.

Preserve the season’s bounty by freezing them, so you can make this compote at any time of year.
