When you haven’t got time to go to the shops, I’ve got you covered with a super-convenient recipe that heroes tins and frozen peas. These parcels are really forgiving, so have fun with them! I promise they’ll look rustic and beautiful when baked.
Recipe From
3 cloves of garlic
2 small red onions
olive oil
3 heaped teaspoons garam masala
1 teaspoon crushed chillies
½ a bunch of fresh mint (15g)
red wine vinegar
1 x tin of new potatoes (400g-500g)
1 x 400g tin of chickpeas
50g frozen peas
4 sheets of filo pastry
150g natural yoghurt
SALAD
1 little gem lettuce
½ a cucumber
1 carrot
120g radishes
1 fresh red chilli
1 lemon
extra virgin olive oil
Brush the parcels with oil and cook in a single layer in an air fryer at 200ºC, in batches if needed, for 10 minutes, or until golden and crisp.
Wrap the sheets of filo in a clean, damp tea towel while you make your parcels – this will make sure they don’t dry out.
Any leftover filo can be wrapped in greaseproof paper and frozen.
