150g brown basmati rice
2 large free-range eggs
4 chestnut mushrooms
3cm piece of ginger
1 fresh red chilli
½ a bunch of fresh coriander (15g)
2 spring onions
olive oil
medium curry powder
100g ripe cherry tomatoes
100g frozen peas
100g baby spinach
1 lemon
2 heaped tablespoons fat-free natural yoghurt
