About the recipe

I'm super-pleased with this soup because it's big in flavour, it's ridiculously comforting and it's not your everyday predictable recipe. The play on French toast for the croutons, I think, makes total sense and means this dish is even more desirable, and to e honest, I can't believe I never thought of doing it before. Absolutely gorgeous.

2 cloves of garlic

2 onions

2 bulbs of fennel

olive oil

1 vegetable stock cube

1 x 400g tin of cannellini beans

1 large free-range egg

50g Cheddar cheese

½ teaspoon dried chilli flakes

1 teaspoon fennel seeds

100g ciabatta or stale bread

4 teaspoons fat-free natural yoghurt or single cream
