About the recipe
This is a perfect combo – you can’t season asparagus while you’re steaming it, so the slight saltiness of the anchovies seasons it for you when you toss it in the butter. Check out Flavoured Butters.

50g anchovy fillets in oil, the best you can find
100g unsalted butter
1 small pinch of dried red chilli
1 lemon
700g asparagus, trimmed and peeled if necessary
