You know when you’re out camping, sitting around the fire, and you just want something seriously delicious? A little snack, a little nibble. Well, I’ve taken the humble s’more and given it a savoury twist – and let me tell you, it is an absolute revelation! Brilliant for your next summer adventure, or the perfect way to recreate that holiday vibe at home.

Ingredients

OPTION 1

200g Cheddar cheese

8 teaspoons apricot jam

8 sprigs of thyme

16 sourdough crackers

OPTION 2

200g Cheddar cheese

1 beef tomato (130g)

½ a bunch of fresh basil (15g)

16 oatcakes

Method

Light the barbecue or a fire. Soak 8 skewers in cold water for 30 minutes before cooking (if using wooden).

For option 1: cut the Cheddar into eight chunks and thread each onto a skewer. Pick the thyme leaves. Hold the skewers over a warm fire until the cheese is soft and melty, but still in one piece (roughly 5 minutes), then sandwich between sourdough crackers with the apricot jam and a pinch of thyme leaves.

For option 2: cut the Cheddar into eight chunks and thread each onto a skewer. Slice the tomato into 8 pieces and season with sea salt and black pepper. Pick the basil leaves. Hold the skewers over a warm fire until the cheese is soft and melty, but still in one piece (roughly 5 minutes), then sandwich between oatcakes with a slice of tomato and a few basil leaves.
